For the Stuffing

8 Tbsp., Unsalted Stick Butter

1 1/2 cups, Celary
1 cup, chopped, Onions, raw

Preparing Croutons

Cut bread into small squares using an electric knife

They should resemble the size of croutons you purchase.

Once cut place bread into a metal bowl.

Sprinkle pepper, garlic and onion powder, and poultry seasoning over the bread.  Mix well.

Bake the croutons in a preheated 350 degree oven until they are brown.  Stir frequently.  Once done set aside to cool.

To Prepare "fake" Sausage

Add ground pork to a cast iron skillet and season with mace, sage, garlic and onion powder, all spice, black pepper and crushed fennel.  Cook meat thoroughly.  Once done, set aside.

To Prepare Onion and Celery

Add unsalted butter to a cast iron skillet and cook onion and celery until soft.

Putting It All Together

Add meat mixture, onion and celery mixture to the browned croutons.  Mix well.  Then add 1 TBSP of Poultry seasoning to the stuffing.  Mixing well aging.  If you like a more sticky stuffing add water to get to the consistency you like.  Otherwise warm the dish in the oven or microwave and serve warm.

This also tastes great right out of the refrigerator.
